This side is easy to put together and is both hearty and nutritious. It has two of my favorite foods — garbanzo beans and chard.
Swiss Chard with Garbanzo Beans & Fresh Tomatoes
INGREDIENTS
2 tablespoons olive oil
2 tablespoons olive oil
2 shallots (or 1/2 onion), chopped
2 cloves garlic, minced
16 oz can garbanzo beans, drained
Salt and black pepper to taste
Cayenne pepper to taste
1 bunch red Swiss chard, rinsed and chopped
2 tomatoes, sliced
2 tsp lemon juice
DIRECTIONS
- Heat olive oil in a large skillet. Stir in shallot or onions and garlic; and cook and stir for 3 to 5 minutes until soft and fragrant. Stir in garbanzo beans, and season with salt, pepper, and cayenne; heat through.
- Place chard in pan, and cook until wilted. Add tomato slices and mix in lemon juice. Heat thoroughly and add additional salt and pepper if needed.
